최종 결론 및 팁 :

평균 사이더 발효 온도는 18 ~ 21° C 입니다. 만약 이보다 낮은 (14 ~ 16 ° C)온도에서 발효한다면, 발효 기간이 더 오래 걸리지만 사이더 맛이 훨씬 더 깨끗하고 크리스피합니다. 만약 더 높은 온도 (22 ~ 26 ° C)에서 발효하면, 발효 기간이 감소되겠지만,  맛은 매우 에스테르적이고 페놀 성입니다. 또한 고온에서 효모 냄새 (막걸리)를 감지 할 수 있습니다.


Q&A :

내 사이더에서 성냥 또는 계란 냄새가납니다.

이것은 사이더 효모가 매우 스트레스를 받는 환경에 있고, 이에 따른 부산물로 황화수소 가스 (H2S)를 생성 할 때 발생합니다. 다행인 점은, 약 온도 (23 ° C)에서 충분한 발효 시간을 주면, 이 냄새는 없어집니다. 이 냄새를 피하려면 효모 영양소를 사용해야 합니다 . (특히 알코올이 매우 강한 사이더를 만들기로 결정한 경우). 왜냐하면 과일 와인에는 맥주 맥아 즙과 같은 효모 영양소가 없기 때문입니다.

나는 효모 영양소를 추가하는 방법을 모릅니다.

맥주와 사이더의 경우 효모 영양소를 추가하는 방법은 똑같습니다.  양조 첫날 2gr의 영양소를 추가하십시오. 더 많은 영양소를 추가해야하는 경우, 이틀에 한 번씩 천천히 하세요. 그러면 효모가 영양분을 섭취하고 대사 할 수 있으며, 사이더의 PH가 너무 빨리 변하지 않습니다. (한 번에 너무 많은 영양소를 추가하는경우 효모를 손상시킬 수 있음).

 

내 사이더가 흐리고, 투명하지 않은 것처럼 보입니다.

투명한 사이더를 만드는 비결은 라거링 또는 콜드 크러싱입니다. 사이더를 병에 넣은 후 탄산화를 위해 약 3주를 더 기다려야합니다. 탄산화가 끝나면 사이더를 냉장고에 넣을 수 있습니다. 차가운 냉장고 온도는 사이더를 맑고 투명하게 만듭니다. 2 ~ 3 주 정도 소요됩니다.

 

내 사이더는 와인 맛이 아니라 알코올이 들어간 사과 주스 맛이납니다.

사이더는 맥주가 아닙니다. 발효 시작 후 1 개월 이내에 맥주를 마실 수 있습니다. 사실 일부 맥주는 상당히 빨리 마셔야 합니다. 사이더는 와인입니다. 더 구체적으로 애플 와인. 따라서 우리는 와인으로서 숙성 시간이 필요하다고 생각해야 합니다. 일반적으로 사이더는 몇 달 안에 준비되지만 오래 숙성되면 사이더의 맛이 훨씬 좋아집니다.

사이더를 병에 담아 탄산화한후에, 차가운 온도에서 숙성시킵니다. (가능하면 섭씨 18도 이하). 탄산화가 다 된 이후에는, 역시 냉장고에서도 오랫동안 숙성시킬 수 있습니다.

Final conclusion and tips:

Average cider fermentation temperature is 18 °C~21. °C. If you ferment lower (14°C~16°C) fermentation takes longer but the cider flavor will be much more clean and crisp. If you ferment at higher temperature (22°C~26°C) the fermentation will take less but the flavor will be very estery and phenolic. Also at higher temperature yeast smell (makkolli) can be detected.

 

Q&A

My cider smells like burnt matches or eggs:

This happens when the cider yeast is in a very stressed environment and produces hydrogen sulfide gas (H2S) as byproduct of sulfur processing. The good thing is that the gas will eventually leave the cider if you give enough time, at warmer temperatures (23°C). In order to avoid this smell, we should use yeast nutrients (especially if we decide to make very strong cider) because fruit wines do not have nutrients for the yeast like beer wort has.

If we decide to ferment cider at low temperature also we should consider using 2 packages of cider or make yeast starter. We need to increase the amount of nutrients also.

 

I don’t know how to add nutrient:

For beer and cider, adding nutrients works exactly the same.

Add 2gr of nutrients the first day. If you need to add more nutrients, do it slowly, every second day, so the yeast can feed onto it, metabolize it and the PH of the cider will not change too quickly (too much nutrients in one time can damage the yeast)

 

My cider looks cloudy and not transparent:

The secret to have a transparent cider is lagering or cold crushing.

After bottling cider, we must wait 3 weeks for carbonation. After carbonation is finished we can put the cider in the fridge. The cold fridge temperature will make the cider clear and transparent. It will take about 2 to 3 weeks.


My Cider tastes not like wine but more like apple juice with alcohol.

Cider is not beer. Beer can be drank in less than 1 month from the beginning of fermentation.

As a matter of fact, some beers must be drunk fairly quickly. Cider is a wine. Apple wine more specifically. So we should think that, as a wine, it requires a maturation time. Normally cider is ready in a couple of months but longer aging will make the cider taste much better.

After the cider has been bottled and carbonated, age it in cold temperature. (Below 18 Celsius if possible). You can age it in the fridge also, as long as the carbonation required is achieved.

Returns & Exchanges

1. Requirements:

Please take into consideration that we only accept qualifying returns but not exchanges. Refunds are issued once the returned products clear our inspection.

1) An item is eligible for cancellation if:
-you posted a Return request within 24 hours of payment and your order is still under “Pending” status (if your order is under “Queued for Shipment” status, please contact our customer service center) or
-the order is delayed for more than 10 days since payment and you have not received any notification regarding the delay; or
-the ordered item is out of stock.

2) We accept return(s) if:

-you receive a product different from your order; or

-you receive a defective product.

**Return Instructions

(1) Post a return request on our Return forum within three days of receipt. You are required to attach the photos of the received product(s) and include the item code, the order number, and the reason for the return.

(2) A customer service representative will be in contact to assist you by email or phone.

(3) Items returned must be in their original condition, which includes tags and any packaging. Also, you need to include a note of your order number, name, and user ID.

*Please be advised that returns are accepted ONLY IF you followed the instructions above and your return request has been approved by our staff. Returns that are shipped to us without any prior consent are not accepted.

*Please note that EVEN the defective/incorrect item(s) must be returned with all of the tags and labels intact. The item(s) must be sent in their original packaging and unworn.

*Please include all contents of the original package and free gifts (if applicable) in your return packaging.

* Shipping fee for any return caused by our fault will be paid by the company. However, if EMS’ cash on delivery is not possible then you can scan the return receipt and either mail it with the item to return or post an image of it on the forum. The shipping fee will be refunded once the returned item has arrived.

3) We do not accept return(s) if:

-you are returning the items just because you changed your mind (on size, color, etc.)
-you are returning shoes, bags, or any other accessories
-the products are damaged due to your mishandling
-your return request is not approved by our staff

The following items are not considered defective:

* Items that are originally manufactured without tags or labels

4) If there is a missing item from your order:
