Why glass carboy?
Some people might wonder why
choosing an expensive glass carboy for beer conditioning. Well, plastic containers are ok for
fermenting the beer.
But when people want to
condition their own beer for long time, stainless steel and glass vessels are strongly
recommended.
1st reason is
because most plastics are permeable to gas. So if you store your beer for long
time in a pet fermenter, slowly the oxygen can cross from outside into the
beer, causing a quicker deterioration. Oxygen will also oxydise the alpha acids
from hops, reducing the flavour and intensity of them.
2nd reason is
because pet vessels are much easier to scratch than glass or stainless ones.
These scratches are sort of crevices that bacteria love. So sanitising a
scratched fermenter is very difficult and cannot be perfectly accurate.
Honestly even without scratching, plastic has a rough surface that is already
more difficult to sanitize than glass or steel.
3rd reason is
because if you want to cold crush or lager a pet carboy a sort of vacuum effect
will create, due to the cooling down of the beer. This vacuum is very important
because will protect the beer during conditioning. The pet carboy anyway will
shrink and sometimes will not hold the shape, creating some micro cracks around
the lid that will allow oxygen to get through.

왜 맥주 숙성에는 유리 카보이를 사용해야 될까요?
맥주를 발효시킬때는 플라스틱 용기를 사용하여도 괜찮습니다. 하지만 오랜기간동안 보관을하려면 유리, 스텐레스 재질의 용기 사용을 권장합니다.

첫번째 이유는 대부분의 플라스틱 재질은 기체가 투과 될수있습니다. 그래서 맥주를 오랫동안 플라스틱 용기에 보관하게되면, 천천히 공기가 맥주에 들어갈수있고, 이것은 맥주의 빠른 변질을 일으킬수있으며, 홉의 알파산과 풍미의 저하에 영향을 줄수있습니다.
2.
두번째로 플라스틱 용기는 유리, 스텐레스 용기보다 표면에 스크래치가 쉽게 생기며, 그 틈사이로 박테리아가 번식할수 있습니다. 사실 플라스틱 재질 자체가 표면이 거칠며, 유리, 스텐레스 용기에 비해 살균이 어렵습니다.
3.
라거 또는 콜드 크러쉬를 하려면, 숙성기간동안 진공 상태를 유지하는것이 매우중요한데, 플라스틱 용기는 온도의 변화에 따라 줄어들꺼나 형태의 변형 또는 뚜껑부분에 작은 틈을 만들어, 공기가 투과되는경우가 있습니다.
